Hi! This is my first blog post here, and I'm looking forward to sharing everyday happenings with you! This website is so fun for my Mom and I to work on, especially because of YOU - we love helping you discover and thrive on the SCD! This will be a fun spot where I can share with you what's going on...most will be related to the SCD, but some will be just sharing what goes on in my very thankfully normal and full life - it's overflowing with my husband, my kids, travel, good food, cooking, homeschool, laundry, searches for SCD-legal food, activities - all things that I can do because I am healthy and happy on the SCD! I had two surgeries in the past two months - my very first surgeries ever (and thankfully NOT related to having Crohn's!). My Mom and Dad came out to help us around the house, with the kids, and with the cooking. After a week I was feeling much better and so Mom and I went out to Mimi's to celebrate the end of the health issue that had been hounding me for the past year! We always love the atmosphere at Mimi's, and it has a great new menu. We've heard it's under newer ownership, and it was nice to see the fresh menu options! We both opted for the Handmade Guacamole Burger, made with fresh SCD-legal guacamole...and it was delicious! I ordered mine without a bun and everything else was fine. (It's always nice to find a menu item that can be ordered without a lot of complicated instructions and warnings about my "special diet.") The hamburger came with Monterrey Jack cheese, lettuce, tomato, I asked for grilled onions instead of fresh, and had a huge scoop of freshly made guacamole. The guacamole added a lot - it was really like a good sauce. (The waitress said the guacamole was made with avocado, red onion, fresh garlic, cilantro, and jalapeno.) With fresh fruit on the side, it was a great lunch! Here's the link to the Mimi's lunch menu. Tomorrow we're celebrating an early family Christmas. Jim got me this handy yogurt cheese maker and my Mom showed me how to make yummy Greek yogurt spread with the thickened yogurt with some green onions, salt and pepper. I used it to spread on SCD Focaccia bread (recipe to come in an upcoming cookbook!). It was amazing! There might still be time to get this for someone on your Christmas list - or request it!
