Yogurt Short-Cuts

Yogurt is a big staple on the SCD for me. There are lots of people who successfully follow the SCD without yogurt, but since I tolerate the SCD yogurt really well I eat it almost every day. This means that I go through it pretty fast, so over the years I've discovered a few tips that help speed up the process of making the yogurt.

One of the first things I learned was to buy two yogurt makers and make two containers at a time from one gallon of milk. This saves a little money on the milk, but most importantly saves time in the kitchen!

The yogurt holds up well in the fridge for up to a month as long as it is in a well-sealed container. But I go through my gallon in about 1 to 2 weeks, depending on whether I'm using it in recipes, making smoothies for the whole family to share...or just enjoying it with honey for a snack.

When I make the yogurt, and I'm letting it cool down to the temperature that is yogurt-starter friendly, most of the time I'll just let it sit on the stove to cool. BUT, if I'm in a hurry (making it late at night or trying to get it done before we go somewhere, for example), I put the pot in the cleared-out kitchen sink, plug the sink, and add cold water to the sink, around the pot. Then I stir the milk frequently and wait for the temperature to drop, which it does pretty quickly - in about 10 minutes. Sometimes I add a little more cold water to the sink when the current water gets warm. This shaves probably 45 minutes off of the time, which can be a great help when I'm pressed for time!

Have you tried a hand-held blender?

Jim picked me up an Oster hand-held blender recently, and at first I was stymied with how I would actually use it...what I'm doing seems to be working fine already, right? But then.......this week I made Pea Soup and figured I'd give it a try.

WOW! Did it work fast to make the soup super smooth! The kids ate their soup faster and with less complaints, and Jim and I liked the smooth texture. It almost feels like I poured it out of a can or box! (Now wouldn't that be an SCDer's dream come true?) ;-)

The only thing to watch out for is that you need to keep the blender part submerged in the soup, almost near the bottom, to avoid a big mess! But honestly, even if I made a mess it still just might be worth the smooth product and ease of use. I can already see myself using it in sauces, and any other soup that requires pouring it into the blender after it has been cooked.

Smashburger

Wow, looking back in my pictures I think I found the first photo of one of my first Smashburgers - could it really be 4 and a half years ago?! We discovered Smashburger about a year after we made our second big move to another state, and after I tasted Smashburger I was hooked. We have made it a weekly tradition to eat on Thursday or Friday nights, because really no other restaurant compares taste-wise for a great SCD dinner. And the price is good compared to other sit-down restaurants.

I order a Create Your Own, Big burger, with no bun, lettuce, tomato, cheddar cheese, and extra grilled onions.

There is good reason Smashburger is now expanding to other parts of the country! Check their restaurant locator to see if there is one near you... I sincerely hope there is, so you can also enjoy the juicy, flavorful goodness of a Smashburger!
