Camping in Yosemite: Preparing and Traveling

We stopped at a little hamburger stand on the way and everyone got burgers. I decided not to risk it and opened up my Trader Joe's canned chicken and legal Costco peaches (with grape juice and no sugar added). While not the perfect lunch, it gave me some yummy salty protein and a little something sweet to hold me over for a while.

Some great snacks along the road were these Mariani Sesame bars, as well as Mariani Trail Mix bars, and legal Larabars. Oranges, bananas, apples, and legal mango juice from Costco also filled in the gaps nicely between meals or when it was hard to find a legal meal on the road.

When my husband would order his and the boys' breakfasts at a fast food restaurant, I asked him to also get me a cup of hot water so I could add my favorite decaf black tea bag to it...

The beauty of Yosemite is amazing! I felt so lucky to be there soaking it all in.
We just got home from a wonderful camping trip to Yosemite! It was so beautiful and rejuvenating, and the weather was perfect so we had lots of opportunity to enjoy bike rides, hikes, photography, campfires, and swimming. Coming from lots of rainy weather here in May it was a much-appreciated sunny break. Meeting my parents there was icing on the cake. It was so fun to introduce our boys to a place that Jim and I have fond memories of visiting as we grew up. And since my Dad went camping in Yosemite with his family every summer as a kid, he shared fun little historical tidbits with us too. It was nice to feel connected to him and his family and to share that generational link with the boys.

Of course, having my mom there was great too! We all worked together on sharing the meal preparations. We made the breakfasts, and they made the dinners. I appreciate my mom's support on the SCD and it was a true vacation to know that the dinners she was making were things I could eat, too. And what a nice break not to have to cook every meal!

In fact, Jim told me he enjoyed the thought of cooking breakfasts, so he made the breakfasts and did a great job! So it was really nice to get a break all around for a week.

Planning what we would make and bring was made easier with an Excel spreadsheet. We planned out every breakfast and what food and utensils and appliances would need to be brought along. When this was figured out we made a grocery list and a "to bring" list.

Since we were staying in Housekeeping, we knew we would have some electrical outlets, which allowed us to bring a griddle and an electric skillet. My mom brought an electric tea kettle to heat up water for tea or coffee as well as her own electric skillet.

We packed most things in plastic bins, in categories so it would be easy to find what we needed, and also so we could easily slide them in and out of the bear lockers. We double-checked the dimensions of the bear lockers ahead of time and made sure our coolers and bins would fit inside.

A few bins held things like plastic silverware and paper plates, bowls, and cups, and kitchen tools. These we kept out near the table. We also brought a low rectangular tub for washing appliances and tools. This tub also served as a holder for items we stored during the day.

We had two big coolers; one for drinks and one for items we needed to keep cool.

On the way up we had a dry cooler (fabric-sided with a zip top) behind the front seats in the middle where we could easily keep snack items and things like honey so I could easily get yogurt from the big cooler at a stop and add honey for a quick breakfast or lunch while everyone else got fast food. Legal Larabars and Mariani bars, bananas, sesame seeds, tea bags, legal fruit leather, and legal canned Chicken (Trader Joe's) with a can opener were also kept in the dry cooler. To serve my food in, I kept some plastic cups and silverware in the dry cooler too.

Having these items handy on the way up to Yosemite made the trip fairly easy for me. There were times I did get hungry, but we were able to find a couple of In N Out's on the way there and back. I ordered my "Double meat with tomatoes and grilled onions only, protein style" and that helped round things out for me.

By the time we reached Yosemite we were ready to set up camp and enjoy the beauty and family fun!

California Christmas

    We had a vacation at my Mom and Dad's over Christmas and New Year's, and I wanted to give you a little glimpse of how we do vacations while on the SCD. 
    

    We started out before Christmas on an overnight drive...and then stopped the next morning in Las Vegas. Stopping overnight isn't true Jim-&-Erin-style travel, but with my recovery from recent surgery we decided to take it a little easier this time. (Believe it or not, we've found that it's actually easier for us to drive straight through the night and through the next day than to stop at a hotel - the kids sleep through the night in the car making for less stops, and we have to deal with less traffic along the road!)
    

    We looked for a hotel with a refrigerator in the room (of course, most hotels will provide one if you ask). This helped to store my precious SCD yogurt and cheddar cheese. We brought two coolers - this cooler with ice, yogurt, cheese, and other food and drinks for the rest of the family. We also brought a dry cooler for items like sunflower seeds (these from Trader Joe's), Mariani Trail Mix Honeybars and Seseme Honeybars (bought at Walmart), honey, raisins, these Larabars, plastic cups and plastic silverware for eating yogurt and honey or other snacks along the way.
    

    It was great to arrive in "the land of In-N-Out Burger." :) We stopped at In-N-Out several times both along the way and while we were running around town. This is my standard order: "Double meat, with lettuce, tomato, and grilled onions only, protein style." I sometimes order it well-done, and sometimes with a Diet Coke.

On Christmas Eve we had a get together with my Mom's side of the family. It was so fun to be together in one place! This year to make it easier on my Grandma, we each brought an appetizer to share. We ended up having a feast! And it was fun to see what each person brought. My mom and I put together one of my favorites - bacon-wrapped dates...they are simply irresistible! And so easy to make! Stuff one unsalted almond into a pitted date, wrap in a half slice of pre-cooked bacon, and hold it together with a toothpick. Bake in a 350 degree oven for about 15 minutes. (We used pre-cooked bacon from Costco.) This would be an excellent appetizer anytime for a party. We actually served these at our wedding for an appetizer reception. Yum.

A day at the beach was definitely in order, as the weather was warm enough and we don't live near any beaches. Our middle boy especially loves the beach and was aching to get down there! It felt so good to soak in some sun and fun! Close to the beach is the Crab Cooker, a favorite restaurant of ours with a fun, laid-back feel and quirky decor. We met my parents there for dinner and I ordered the Light Eater, which we have verified is just grilled fish with butter and Paprika on it. With a side order of tomatoes it was a good meal.

    
My mom is fun to visit because she's always thinking up new SCD meals! She made some SCD Nachos using yellow squash as a base (sliced and boiled for a few minutes until barely soft and drained well). She made sides for everyone like ground beef, homemade guacamole, chopped tomatoes, cilantro...and I added a spoonful of SCD yogurt on top instead of sour cream.

 
Jim and I celebrated ten years of marriage with a trip to a hotel by the beach! I think my favorite part was the breakfast in the hotel dining room each morning. It's pretty easy to find SCD-friendly breakfast foods and I thoroughly enjoyed the wide variety of available foods! I ordered an egg, avocado slices, fresh fruit, bacon, and fresh-squeezed orange juice. I also asked for hot water and added my own decaf black tea bag. They provided some little jars of delicious European honey. 


The beach was cold, but we were determined to enjoy it anyway! It didn't hurt to have a jacuzzi to soak our freezing feet in after we got back, though! Jim enjoyed taking some pretty sunset pictures.
