Marinate the chicken for the Spiced Chicken Salad in a creamy yogurt based marinade; cook it quickly, pull in other ingredients, and turn out a substantial main dish salad with very nice flavor. To me, "piccata" means lemons and capers, and these are terrific seasonings for the Turkey Piccata cutlets. So quick, and such bright flavor! When it comes to Day 3, you've already cut up the chicken into pieces and cooked the navy beans on Prep Day, so throwing together the Chicken Fajita Chili in the crock pot is easy! Add toppings and you've got a delicious bowl of warmth that's good to go. We love pork with applesauce, so Apple-Sassed Pork Chops with Butternut Squash really hits the spot. The recipe calls for frozen butternut squash but cutting up our own and peeling with a vegetable peeler wasn't all that hard! Love it topped with cilantro and toasted coconut. Sloppy Joes are one of those comfort foods from childhood that are worth bringing back. They have that sweet and sour flavor mixed easily with ground beef and chopped veggies for a snappy, tasty meal. Yum! And when it comes to eggs, they're wonderful poached in a Mexican flavored tomato mixture. Top off Mexican Eggs & Guacamole with some honeydew melon. And when the day is done, treat yourself to a slice of Spanish Orange Almond Cake by the fireplace with a cup of tea. You deserve it! You do!
